Mustard is one of the oldest spices used in the world. It's pungent and spicy on the nose, but that heat can be abated with a little acid. Yellow mustard is milder than its darker counterparts, but still packs a little punch. Use them in dressings, brines, and sauces, or grind them up to make your own mustard sauce at home.
