Saigon cinnamon—a type of cassia—is like if you took the cassia cinnamon you're familiar with and concentrated it. The higher oil content makes this variety intensely fragrant and flavorful, sharp, and sweet. This is not a cinnamon to be blended into the background of oatmeal cookies and spice cakes.
