Ras el hanout, originating from Morocco and meaning "top-shelf", is a warm, spicy, earthy, and sometimes hot spice blend that's used to season meat and fish, vegetables, and even rice and couscous. Though it's not typically used in cooking every day, the mix is often used to flavor tagines, meatballs, and b'stilla.
