Panch phoron means "five spices" in Bengali and is exactly that. This aromatic blend of spices brings big flavors to dishes like dals, curries, and pickles. Heat up this seed mix in ghee, oil, or butter first—dry toasting also works—and use it in your favorite Indian dishes or have it over rice, naan, and tofu or seitan.
