When fresh limes aren't available, dried lime peel can be a pretty good replacement. Great in salad dressings and vinaigrettes, with tacos, on chicken wings, or in your salsas and sauces. Rehydrate the dried peel in a bit of liquid before adding to your dishes to get the best out of them or grind them into a powder and use as a seasoning.
