Fenugreek has a sweet aroma, almost like maple syrup. Common in Middle Eastern and Indian dishes, it's also used to flavor Ethiopian niter kibbeh (think: spiced ghee). It's an essential ingredient in panch phoron and sambar. Grind up the fenugreek seeds for spice mixes or use them whole at the beginning of cooking so they have the time to soften and release their flavors.
