Fenugreek has a sweet aroma, almost like maple syrup. Common in Middle Eastern and Indian dishes like rfissa and aloo methi, it's also used to flavor Ethiopian niter kibbeh (think: spiced ghee). It's an essential ingredient in panch phoron and sambar. Use ground fenugreek seeds in sauces and rubs where you want a sweet woody aroma.
