Called "true cinnamon", Cinnamomum verum is a little more refined than the cassia cinnamon you're used to. It has subtle floral and herbal notes, and while you can use it in the place of cassia (the most common form of cinnamon in North America), it complements flavors in Mexican hot chocolate, dishes with fruit like pies or poached pears, and horchata.
