Allspice, as the name suggests, tastes like a blend of many spices—particularly warm spices such as cinnamon, nutmeg, cloves, and pepper. Whole allspice is used as a mulling spice along with cinnamon and star anise to flavor wine and cider, as a pickling and brining spice, and to flavor stews and sausages. When braising beef or lamb, add allspice berries to the pot for enhanced flavor.
