Sichuan peppercorns are a magic ingredient. They're intensely fragrant with floral and citrus qualities, and they leave the tongue tingling. Essential in Sichuan cuisine (of course), being a key ingredient in málà seasoning, you can toast them and use them whole, or grind them into a powder before adding to your dishes. If you're trying out Chinese cuisine, Sichuan peppercorns are a must-have.
