Madras curry originates from Southern India in the city of Madras (now Chennai). Traditional Madras curry is fairly hot, but ours is more on the medium side. This aromatic blend is made with pungent spices like hot black mustard, musky long pepper, and dried curry leaves. Maximize the flavor by blooming the powder in oil or ghee first.
