Jerk seasoning is a spicy hot blend that is used in many areas of the Caribbean. Used as a dry rub or made into a marinade for the likes of chicken, fish, shrimp, or pork, the meat can be grilled, roasted, sautéed, or smoked. To make a paste for your protein, use 2 tbsp seasoning, 2 tsbp white vinegar, and 1 tbsp water; mix, then slather it on.
