Smoked paprika is made from peppers that have been smoke-dried over oak fires. The flavor is hot and, of course, smoky. This variety goes into Spanish chorizo and sobrassada, but can also be used in stews, humus, grilled meats and vegetables, and beans and lentils. Try it out in any dish—you might be surprised to find how well it works.
