Green peppercorns are simply the dried unripe fruit of the black pepper plant. They're fresher and fruitier than black or white peppercorns, and aren't nearly as spicy. Grind some over any kind red meat, poultry, or seafood; use in a green peppercorn sauce; or make steak au poivre with it. Green peppercorns can also be mixed with black peppercorns in a mill for a fresh and hot seasoning.
