Fenugreek has a sweet aroma, almost like maple syrup. Common in Middle Eastern and Indian dishes like rfissa and aloo methi, it's also used to flavor Ethiopian niter kibbeh (think: spiced ghee). It's an essential ingredient in garam masala and berbere, and dried fenugreek leaves are used in curries, with vegetables, and in other sauces.
