Known for its use in rye bread, caraway seeds are also the main flavoring of sauerkraut. It's lighter than anise and has a similarly floral profile with a bit of mint and pepper. In Germany, it's used to season pork; in Austria, beef; and in Hungary, goulash. Caraway seeds pack a strong flavor, so use just a bit in dishes like potato salad, coleslaw, and apple pie to get the flavor you want.
