Allspice, as the name suggests, tastes like a blend of many spices—particularly warm spices like cinnamon, nutmeg, cloves, and black pepper. Ground allspice goes well in those fall and winter bakes such as spice cakes, gingerbread cookies, and pumpkin pies; it's an essential ingredient in Jamaican jerk seasoning; and it's what gives Cinncinati-style chili it's distinctive flavor.
